Ingredients: Urad dal – 3/4 cup, Little Millet – 1cup, Little Millet Cooked Rice/(Poha)(Optional) ,Fenugreek Seeds – ½ teaspoon, Salt – to taste, Desi Cow Ghee/Bull driven Oil – as required (to grease idli plates), Water – as required (for soaking, grinding, steaming)
Little Millet Idli
1)Soak little millet for 6–8 hours and urad dal for 5–6 hours along with a few fenugreek seeds. For 1 cup of little millet, use 3/4 cup urad dal. 2)Grind them in a wet grinder, adding the soaking water of little millet as needed. You can optionally add little millet flakes or cooked little millet rice for a softer texture. Grind until you get a smooth batter 3) Set it aside for 6 hours or overnight to ferment. Once fermented, add salt and a little water if needed to adjust the consistency. 4)Grease idli plates with desi cow ghee or oil, pour the batter into the molds, and steam for 8–10 minutes on medium flame. Note: Do not discard the water used to soak the little millet, as it contains nutrients that should be used while grinding.


Ingredients: Barnyard Millet / Little Millet – 1 cup, Onion – 1 medium (finely chopped), Vegetables (carrot/beans/peas) – 2 tbsp, Water – 3 cups, Ginger – 1 tsp (grated), Green Chillies – 3, Groundnuts – 1 tbsp (soaked), Oil – 1½ tbsp, Mustard Seeds – ¼ tsp, Skinned Black Gram – 1 tsp, Curry Leaves – 1 sprig, Turmeric – a pinch, Salt – to taste, Coriander Leaves – 2 tbsp
Little/Barnyard Millet Upma
Steps to Follow:
Soak Little/Barnyard Millet for 6-8 hrs
1)Prepare tempering with oil,turmeric, mustard, urad dal, curry leaves. 2)Add onion, ginger, chillies, vegetables, groundnuts. 3)Add soaked water and Barnyard/Little Millet and salt and boil.4)Cook on low flame until done.


Ingredients: Urad dal – 3/4 or 1/2 cup, Foxtail Millet – 1cup, Foxtail Millet Cooked Rice/(Poha)(Optional) ,Fenugreek Seeds – ½ teaspoon, Salt – to taste, Desi Cow Ghee/Bull driven Oil – as required (to grease), Water – as required (for soaking, grinding, steaming)
Foxtail Millet Dosa (Fermented, probiotic-supportive)
Steps to Follow: 1) )Soak Foxtail millet for 6–8 hours and urad dal for 5–6 hours along with a few fenugreek seeds. For 1 cup of little millet, use 3/4 or 1/2 cup urad dal. 2)Grind them in a wet grinder, adding the soaking water of foxtail millet as needed. You can optionally add Fox millet flakes or cooked foxtail millet rice for a softer texture. Grind until you get a smooth batter 3) Set it aside for 6 hours or overnight to ferment. Once fermented, add salt and a little water if needed to adjust the consistency. 4) Add salt just before making dosas. Heat iron tawa, grease lightly with oil. Spread batter in circular motion and cook on medium heat . Note: Do not discard the water used to soak the Foxtail millet, as it contains nutrients that should be used while grinding.


Ingredients: Kodo Millet – 1 cup, Moong Dal – 1/2 cup, Water – 5 cups(adjust water for required thickness), Black Pepper – 1 teaspoon (crushed), Cumin Seeds – 1 teaspoon, Curry Leaves – 1 sprig, Desi Cow Ghee – 1 tablespoon, Salt – to taste
Kodo Millet Pongal (Low glycemic, highly recommended
Steps to Follow:
1)Rinse Kodo millet and Moong gram dal. 2)Soak millet for 6 -8 hours. 3)Cook millet and dal together with soaked water until soft(use pressure cooker if required) 4) Seasoning:Heat ghee/bull driven oil, add cumin, curry leaves,peanuts and add grinder paper to the oil at the end 5)Add the Seasoning to cooked millet-dal mixture and salt. 6)Mix well and simmer briefly
Tip: Use A2 Desi cow ghee while eating for enhanced taste.


Ingredients: Barnyard Millet – 1 cup, Toor Dal – ¼ cup, Vegetables – as required, Tamarind pulp – required, Bisi Bele Bath Powder – required, Water – adequate, Oil – 3 tbsp, Mustard, Cumin, Curry Leaves – for tempering, Salt – to taste
Barnyard Millet Bisi Bele Bath (Therapeutic meal)
Steps to Follow:
1)Rinse and soak Barnyard millet for 6 hours.
2)Cook millet and toor dal separately until soft.
3)Cook vegetables in tamarind water.
4)Add bisi bele bath powder and salt.
5)Combine millet, dal, vegetables.
6)Prepare tempering and mix into bath.


Ingredients: Foxtail Millet flour– 1 cup, Urad Dal flour– ¼ cup, Oil,Hot water,Salt – to taste
Foxtail Millet Roti
Dough Preparation: 1)Take 1 glass of Foxtail Millet Flour, which has been soaked, dried, and finely ground. 2. Add 1/4 glass of Urad Dal Flour. 3. Mix both flours thoroughly. 4. Add salt as needed. 5. Slowly pour in hot water while mixing. 6. Knead the mixture into a soft and smooth dough. 7. Tip: Cook on high flame for soft, evenly cooked rotis.

Siri Millet Rice
To cook Siri millets(any one siri millet) first clean the millets with water 1–2 times. Soak them for a minimum of 6–8 hours, using a ratio of 1 glass of millet to 2½ glasses of water. After soaking, boil the millets in the same soaked water, avoiding the use of a pressure cooker. Cook on a medium flame for about 15 minutes. While boiling, add a pinch of salt and 1–2 drops of oil to keep the grains separate, fluffy, and prevent clumping. That’s it—your Siri millets are ready. Regular consumption of Siri millets, when cooked the right way, can greatly benefit your health
